AMSlab analyzes dairy proteins to ensure traceability and sustainability in the sector within the framework of the Smartz4Milk project

As part of the Smartz4Milk project, the AMSlab Group has begun a new key phase of work: the proteomic analysis of milk and dairy product samples provided by several leading companies in the sector. This initiative is part of Block 3 of the project, which focuses on applied research and the generation of new scientific knowledge to optimize the quality and sustainability of the dairy sector.

Analytical research for true “cow-to-table” traceability

At AMSlab, we are focusing our efforts on developing new proteomic-based methods, using liquid chromatography-mass spectrometry (LC-MS) technology. Our goal is to study the protein composition of milk and its derivatives and thus be able to correlate these variables with factors such as cow breed, production area, and the different stages of industrial processing.

Thanks to this line of research, it will be possible to advance toward complete product traceability, which will not only contribute to improving food safety but also highlight the differentiated quality of each dairy product according to its origin.

Current Phase: Analysis of Real Samples from the Production Process

We are currently receiving and analyzing samples provided by several of the project’s collaborating companies: Lence, Bico de Xeado, Queizuar, CLUN Acolat, Prestes, and CAPSA. These samples are of milk, yogurt, milkshakes, ice cream, and cheese, collected at different stages of the production process, from raw milk from the farm to the final product ready for the consumer.

In our laboratories, we are applying an internally developed method that allows for the simultaneous determination of 20 dairy proteins, including variants of interest such as beta-caseins A1 and A2. This approach will allow us to study how the protein profile varies throughout the production stages, providing valuable information for both product characterization and industrial process improvement.

Towards a Smarter and More Transparent Dairy Sector

The results we will obtain in this phase of the project will not only contribute to generating new scientific knowledge, but also, together with the work of Plexus and Sixtema, will provide practical tools for companies in the sector to improve the quality, sustainability, and differentiation of their products. Ultimately, we are working towards a more efficient, digitalized, and transparent dairy sector.

A More Efficient, Digitalized, and Environmentally Friendly Sector

Smartz4Milk aims to transform the dairy sector’s value chain by minimizing its environmental impact, reducing food waste, and digitalizing its processes. All of this, while keeping in mind the importance of maintaining the nutritional quality standards of milk and its derivatives, thus reinforcing their role in a healthy diet.

In this comprehensive transformation of the sector, the generation of scientific knowledge plays a strategic role. For this reason, our team is participating in one of the primary research projects included in the general framework of SmarTZ4Milk, developing analytical tools that allow for progress in the traceability and characterization of milk from its origin to the final product.

Funding and Budget

The SmarTZ4Milk project is funded through the Industrial Strengthening Actions for the Agri-Food Sector (PERTE AGROALIMENTARIO).

Total budget: €16.8 million, with €9.7 million in grants awarded, financed by the Ministry of Industry and Tourism (MINTUR) and the European Union, through Next Generation EU funds.
